GRAND CHEF COOKED HAM

The high quality Grand Chef ham is produced using the legs of pigs coming from carefully selected breeders, boned and trimmed of excess fat, salted, slightly aromatised and then cooked slowly for many hours in a steam oven. Its delicate taste, fragrant scent and high digestibility makes it a quality product suitable for consumers of all ages.

CHARCOAL ROASTED HAM

Each pork thigh is boned and trimmed of excess fat. It is then tied by hand and roasted in the oven and lightly smoked with certified beechwood.

PRAGA HAM

The pork leg is first boned, trimmed of fat and seasoned. It then passes to the salting where it rests for 24 hours before being pressed and placed in a steam oven for a slow cooking process. After cooking, it undergoes a smoking process with beech wood that gives this ham its typical delicate flavour and aroma.

HOME-STYLE HAM

The Da Pian home-style ham comes from pork leg that has been processed in the simplest way: after boning, it is trimmed of fat and delicately flavoured. After salting for 24 hours, it is pressed in a mould and then cooked slowly in a steam oven.

The is the most classic of cooked hams, perfect for a snack, appetizer or for a healthy and nutritious meal.

NOSTRANO (LOCALLY SOURCED) HAM

The Da Pian Nostrano ham comes from the flesh of pork leg trimmed of fat, flavoured with salt and spices, wrapped in netting and cooked slowly in a steam oven. It has a special cylindrical shape that makes it practical to slice. The taste of an excellent cooked ham in a smaller, leaner and tasty slice.

Salami

Da Pian offers a range of salami prepared according to traditional Italian and Venetian recipes. Delicate flavours such as the typical sopressata (pressed) salami or spicier flavours with the Naples-style salami to satisfy every palate.

NOSTRANO SALAMI

The Da Pian Nostrano salami is prepared with a mixture of minced pork meat and fat that has been processed with salt and spices according to the traditional recipe of Veneto. The mixture is stuffed in a natural or collagen casing and tied with string. It is then dried in environments with an ideal microclimate to enhance the flavours and aroma.

It is produced in two versions: with garlic for strong flavour and without garlic for a more delicate flavour.

HOT NAPOLI SALAMI

The hot Napoli salami is a classic specialty of Italian cured meats, prepared according to the recipe of Campania with a mixture of lean meat and pig fat. The particular mix of salt, spices and hot chilli give this salami its typical flavour. It has an intense red colour characterised by an unmistakable, strong and hot taste for lovers of regional specialties.

VENETO-STYLE SOPRESSA WITH AND WITHOUT GARLIC

The typical Sopressa Veneta is a mixture of pure pork and salt, flavoured with a mixture of spices that gives this traditional specialty its characteristic taste. Made according to the ancient regional recipe, it is stuffed in a natural or collagen casing and tied with string. After drying for 50/70 days in a temperature and humidity controlled environment, the grain is characterised by the typical pink colour of meat and white of the fat.

Produced in a traditional version with garlic for those who love stronger flavours and without garlic for a more delicate flavour.

Bacon products

The Da Pian bacon products are prepared with an exclusive recipe involving slow cooking in a steam oven and smoking with beech wood that gives it a delicate and tasty flavour.

STEWED BACON

Choice lean bacon of Italian pigs is boned and then salted and flavoured. The very slow cooking in steam ovens and the smoking with beechwood chips gives the product a sweet unmistakable flavour, the typical pink colour of meat and golden surface. Ideal as a salami or in the most refined preparations.

The bacon of choice lean pork coming from Italian breeders.
